Ingredients
– 8 oz fettuccine pasta
– 1 lb large shrimp, peeled and deveined
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 1 teaspoon Italian seasoning
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
– Lemon wedges (optional, for serving)
Instruction
1. Cook the Pasta:
– In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. Sauté the Shrimp:
– In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
– Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
3. Prepare the Alfredo Sauce:
– In the same skillet, pour in the heavy cream, stirring to combine with any remaining garlic and shrimp juices. Bring to a gentle simmer.
– Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
4. Combine Pasta and Sauce:
– Add the cooked fettuccine to the skillet, tossing to coat the pasta in the Alfredo sauce. Add the cooked shrimp back to the skillet and mix well.
5. Serve:
– Divide the shrimp Alfredo pasta among serving plates. Garnish with chopped parsley and serve with lemon wedges on the side, if desired.
